CARNIVAL FESTIVALS ARE ALL ABOUT CELEBRATIONS AND DELICIOUS FOOD

Carnival festival, in addition to the celebrations, feasts, and masquerade parties, also has culinary interest! Everyone, even the poorest, must eat meat. The beginning takes place on Friday before the great fast of Lent begins.
Meat is mainly pork, with sausages, which are grilled and cooked quickly. The veal “roast” is also considered an appropriate food for the carnival festival, with its garlic and thick fragrant red sauce. The pork chops with risotto.

Marinated Souvlaki skewers

Ingredients for 14 souvlaki skewers:

  • 1,200 gr. pork (from leg mixed with a little neck), cut into cubes of about 2-3 cm.
  • 1 large dry, coarsely chopped onion
  • salt, pepper
  • 3 spoons of olive oil

For the marinade:

  • 600 gr. yoghurt
  • 2 tsp. paprika soup
  • 3 spoons of olive oil
  • 1 tsp. tomato paste soup
  • 2 tsp. tablespoon lemon juice
  • salt, pepper

For serving:

  • 1½ κουτ. σούπας δυόσμος ξερός ή ρίγανη, κοπανισμένα
  • χυμός λεμονιού (ανάλογα με το πόσο μας αρέσει)

Instructions:

Marinade: In a bowl, mix the oil with the paste, paprika, lemon and pepper. Add the yogurt and continue to mix with a spoon, until the ingredients are mixed. Put half of the yogurt mixture in a bowl, cover it with cling film and leave it in the fridge until ready to serve.

Put the meat in the bowl with the rest of the mixture, mix well to cover with the marinade, cover with cling film and put in the fridge for about 2-3 hours, to marinate.

Skewers: Prepare the coals. We put the cubes on the straws alternately with pieces of onion, making sure to distribute the fatty pieces of meat as evenly as possible, so that each skewer has the necessary moisture.

Remove some of the marinade, lightly oil, season with salt and pepper and put them on the oiled grill. Bake for about 20-25 minutes, turning on all sides, until they are well cooked inside. Pork is only eaten well cooked.

Place on a plate, sprinkle with oregano and sprinkle with fresh lemon. Serve with the reserved yogurt sauce.

Serve with crispy pies baked with olive oil, oregano and cumin.
