Ingredients

  • 1 chicken breast
  • Pistachio pesto
  • Cheddar cheese or any cheese of your choice
  • 1 egg & Breadcrumbs
  • Salt, peppers & paprika

Preparation

Open up the chicken breast and coat with butter. Sprinkle with salt, pepper and paprika and set aside for a ½ hour. Spread the pistachio pesto and cheese over the breast and roll up. Secure with toothpicks. Beat the egg, dip the chicken rolls in the egg and then in breadcrumbs. Bake in the oven for a ½ hour and add a slice of cheese to melt.

Serve with a green salad and cheese sauce.
