Ingredients

  • 2 cups unsalted butter
  • ½ cup pistachios
  • ½ onion, crushed and strained
  • 1 clove garlic, crushed
  • 1 tsp ginger
  • 1 tsp curry powder
  • 1 tbs chopped parsley
  • A pinch of ground nutmeg

Preparation

Blend the ingredients, except the butter, in a blender for 2-3 minutes.

In a big saucepan, melt half the butter, add all the ingredients except the pistachio and simmer over low heat for 15 minutes, stirring occasionally.

Put the mixture in a bowl with the rest of the butter, add the ground pistachio and allow to cool.

Store in the refrigerator. Serve with bread sticks or crisp bread.
